Chicken Bacon Ranch Chili and an Interview!


Hi everyone! I wanted to try something different on the blog for the next couple posts. Since eating real food, and self-care is something that is so important to me, I thought it would be cool to hear what others have to say about it. I’m trying to talk to people who are from different professions, living in different areas, and just people different than me to say what they think!

The first people I brought on are Troy and Elaina, the proud owners of Soul Brewed Coffee Roasters, here in Eau Claire. I asked them a few questions about food, and self-care, so here we go..

1.) tell me a little bit about your self, and your business

We are Troy and Elaina Hoyt, and we run Soul Brewed Coffee Roasters. We roast, bottle, bag, and brew fresh coffee.

2) what does self-care mean to you?

self-care to us is about protecting yourself not only in terms of what you eat but the things you do as well. It’s important to physically take care of yourself, but also to take care of the area that surrounds you all day everyday, [and] keeping good energy around yourself. You can’t JUST eat your way to good health, you gotta protect your “bubble” around you.

3.) how do you practice self-care?

We practice self-care by trying to eat right and staying active. It’s hard to do when you are busy. We really don’t eat much at all, but when we do it’s usually like fresh salsa or chili. We make soups in giant batches, freeze them and eat them throughout the span of a year probably.

4.)What’s your favorite part about Soul Brewed?

We love Soul Brewed as a whole. Everything about it, even if the days get long, and we are totally worn out it’s always worth the hard work.

5.) What’s your favorite “fall” food?

Chili!!! We maybe eat too much chili.

6.)Anything else you would like to share on the blog about real food, or self-care?

We try to advocate treating coffee as a fresh food. The health benefits are plentiful when the coffee is fresh.

The other part about these interviews that I thought would be fun, is creating a version of their favorite recipe. This chicken bacon ranch chili is so good, and so easy to make. I hope you enjoy!


Chicken Bacon Ranch Chili

  • Servings: varies
  • Difficulty: easy

1 pound ground chicken
2 medium white sweet potatoes, diced
1/2 large red onion, diced
1 packed bacon, cooked and crumbled (I use applegate)
1 can tomato paste, 6oz
1 can diced tomatoes, 24 oz
1/2 cup chicken broth
Generous amount homemade ranch seasoning
fresh parsley or dill for garnish


1.) Make sure bacon is cooked extra crispy. save a couple pieces to garnish on top later.
2.) Place everything in the crock pot, and stir to combine.
3.) Let cook on high for 5-6 hours.
4.) Garnish with extra bacon crumbs, and some fresh parsley or dill
