Days 12-18

You wanna know what stinks? Getting one wrong on your final exam, so now your grade isn’t going to  change, and you didn’t need take the final in the first place. Yeah, yeah, yeah, Happy finals week everybody!

With it being finals this week, and going home to see my family and  to help my sister get ready for prom, plus getting ready to move soon, things have been pretty busy.  I prioritized getting some of my other things done before blogging my meals. I know that I wanted to share with you everything that I am eating meal by meal, and I promise I am still going strong, but some other things came up, and I wanted to enjoy my time with my family. While I was home, we went out to dinner, and that was a fun challenge.

I thought I would do something different today, since I basically eat quite a bit of the same food, just in slightly different combinations during the week. This is  especially true when I have left overs. I decided I wanted to share with you guys a few of my favorite treats that are autoimmune friendly. With the stress I have had in the last week or so, a little treat during the day is quite enjoyable.


I prefer to get the ones that are only toasted, no added sugar, but DANG these things are yummy!


The cherries in here are my favorite! They are sweet, a little  sour, and so good. Add a few toasted coconut flakes to a handful of this, and you have a nice little trail mix.

IMG_3565I love making smoothies, but I’m always too cold in the winter to want to drink them, so now that its warming up again, the smoothies are back. Plus, they are a great way to pack in some vitamins. My favorite right now is frozen banana, pumpkin, cinnamon, spinach, water, and a couple ice cubes.

IMG_3580This taste just like chocolate ice cream!! They also have a mint chip which is super good too! As if I didn’t love avocados enough already.

My skin seems to be doing very well as long as I keep moisturizing.

  1. Thanks for the healthy snack suggestions. I’ve not seen any of those before. Are you in the US? I like just plain coconut chips, too.

    I make this great Chocolate mouse with coconut milk, cocoa powder and stevia. You put the can of coconut milk in the fridge, the next day you drain off the liquid, and scoop out the thicker stuff. You whip the coconut stuff until stiffer, like whipping cream, add the cocoa powder and and some stevia and there you go 🙂
