Autoimmune Diet Day 2

Well I realized today that I probably should have avoided the almond milk latte yesterday at breakfast since almond milk comes from almonds… whoops. This is making me even more aware of everything I am putting into my mouth. Every spice, every hidden ingredient, it’s nuts!

Today is going very well, my skin hasn’t been itchy, and all my rashes from before are starting to heal.  I’ve  gotten to spend quite a bit of time outside, walking around and going on a bike ride around town which was nice.

So far today I have eaten…

Breakfast: 1/2 large avocado mashed with 4 oz of turkey sausage cooked with fresh lime juice squeezed on top and some ranch seasoning. It was actually really tasty, but it did not look very pretty otherwise I would have taken a picture.

Snack: Medium iced black coffee

Lunch: Some left over pork and steamed broccoli from last night, and a kombucha.

Dinner: Grilled turkey burgers topped with avocado, and mushrooms sautéed in coconut oil on a bed of spinach, a few pieces of water melon, pesto (basil, garlic, olive oil, lemon) grilled cauliflower, and grilled carrots. FullSizeRender 2

  1. I commend you for taking charge of your health and testing to see what works for you. I have been a long, long time holistic therapist, with training in functional nutrition, too and I would recommend avoiding processed meats. You mentioned bacon and sausage yesterday and sausage today. I know it is hard to find foods that fill you up, nurture you and fulfill the emotional need of eating as well, when on such a restrictive diet but you aren’t going to help your body with the chemicals in processed meats.

    Best wishes in finding a fulfilling diet that supports your health and well being. I had a friend tell me a long time ago that it was better to eat a doughnut and be happy with it then to eat tofu and be cursing every bite. So eating what pleases you emotionally and feeling good about what you are eating is important as well.


    1. yeah, I try to find the best local sources as I can. I know the restaurant I went to probably wasn’t the greatest source, and probably not cooked in the greatest way, but thank you! great words to hear.

      1. You might want to add some coconut oil and /or coconut milk…the organic can stuff. Coconut is very good for the gut. I’ve read of other anti inflammation diets but not one as strict as yours. I liked the stage one of the south beach diet.

    Way to go on jumping into the protocol!

    I’d been thinking of posting my meals (once I’m fully on board) – it’s really inspirational to see and hear about what others are having. It doesn’t hurt to make it fun to keep track of what we’re eating & how we’re feeling either ;-0)

    Do you make your kombucha or use storebought? I love the stuff- but feel like that’s an advanced skill – plus, there are SO MANY other things to be making!

    I’m super excited to try this sausage recipe after visiting market tomorrow. I’ll be freezing LOTS of it 🙂
