Spinach and Mushroom Omelet Muffin

8 eggs
Hand Full Baby Spinach, chopped
1/3 Cup Mushrooms, chopped
1 TBS Minced Garlic
ΒΌ Cup Yellow Onion, chopped
Pinch of salt and Pepper


Preheat oven to 325 degrees.

In a large bowl whisk together all ingredients.

Then, fill greased muffin tin 2/3 full with egg mixture.

Bake 25-30 minutes until egg is fluffy.

Can enjoy plain, or garnish with avocado chucks or sriracha
