Ranch Roasted Carrots


Today was a big day!! Why, you ask? I ATE CARROTS AND DIDNT GET SICK! For many years now, I have been allergic to carrots, and when I would eat them they would give me a terrible itchy throat, I would have trouble breathing, and I would get really sick to my stomach. Raw, and cooked carrots. So for years, I have been avoiding them. Weirdly enough, I got this strange craving for a roasted carrots. I shouldn’t crave something, I haven’t eaten in years, but there was definitely a craving. So after about two weeks of this craving, I just did it. I actually ate three roasted carrots because they were soooo good! I probably should have just done a few bites, since I wasn’t sure what would happen, and I was home alone, but I’m still here and so excited to be eating carrots. I ate the extra ones I had this morning for breakfast. The recipe is so easy, and you can make a bunch in no time for a quick snack or to eat with dinner.  I’m going to have to try to limit myself from making these too often so I don’t blow it, and get sick, or turn orange because that is a real thing!

Ranch Roasted Carrots

  • Servings: # of carrots used
  • Print

Carrots, peeled or unpeeled

2 Tbs Olive Oil (more or less depending on amount of carrots)

Ranch Seasoning (Recipe Below)


Preheat oven to 425 degrees.

Place carrots on baking sheet, and roll in olive oil until all of carrots are covered.

Generously sprinkle ranch seasoning onto carrots. You can roll the carrots so all of it gets covered.

Bake for 45 minutes.

Let cool, and enjoy!

Homemade Ranch Seasoning:

2 TBS Dried Parsley

2 TSP Dill weed

1 TSP Garlic Powder

1 TSP Onion Powder

1 TSP Dried Chives

1 TSP Black Pepper

Pinch of Salt


 Mix all spices together in bowl.
